1/2 Lb Alehouse Cheddar shredded
1-2 TB vegetable oil
1/2 small onion, minced
2-3 cloves garlic
1 chipotle chili in adobo, chopped **
1 TB Mexican chili powder
1 TB ground cumin
1/2 TB paprika
1 can peeled Roma tomatoes, drained diced
1/2 cup frozen corn
1 can black or kidney beans, drained
1/2 beer, can or bottle
1 bag frozen vegetarian meatballs
3 portobello caps, cut into 1/2 in. cubes
Heat oil over medium heat and cook onions until clear. Add garlic, chipotle and portobello cook for 2-3 minutes. Add chili powder, cumin and paprika. Add meatballs, tomato and beer and cook over medium heat for 10 minutes. Mash meatballs with a masher then add the beans and corn until warmed through 3-5 minutes. Place in oven safe dish and melt cheese in 350 degree oven. Serve with tortilla chips and sour cream. ENJOY!
** Found in Mexican section of grocery store in small can, can substitute Jalapeno pepper.
